Black Chai Tea
This tea is absolutely incredible. It's rich, satisfying and has just enough caffeine in it to give you a jump start if needed. Try steaming the soy milk and making a chai soy cappuccino. Look out, Starbucks! Serve the hot tea with Carob Banana Biscotti Makes 6 servings

Ingredients:

1/2 teaspoon vanilla extract
6 black tea bags (Celestial Seasonings Vanilla Maple Black Tea is good)
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/8 teaspoon ground cardamom
2 1/4 cups low-fat almond milk, or vanilla soy milk
3 tablespoons sucanat sugar
2 tablespoons honey

Instructions:
1. Heat 2 1/2 cups of water in a small saucepan and add the vanilla, cinnamon, cloves and cardamom. Bring to a boil, reduce the heat, and simmer for 2 to 3 minutes. Add the sucanat and honey. Simmer for 2 to 3 minutes more, and remove from the stove. Steep the tea bags in the mixture for 5 minutes. Strain into a container and store for up to 7 days.

2. To serve hot, mix the tea concentrate with the almond milk and heat in a small saucepan, but do not boil. To prepare a single serving, mix equal parts of the tea concentrate with low-fat almond milk or vanilla soy milk and heat in a small pan, but do not boil.

To serve cold, chill the concentrate and serve with equal amounts of low-fat almond or vanilla soy milk over ice.
