Green Chai Tea
Serve this chai tea hot with the Orange Spiced Spelt Biscotti. Makes 6 servings


Ingredients:

4 thin slices fresh ginger
6 green tea bags (Celestial Seasonings is good)
1/8 teaspoon ground cardamom
1/4 teaspoon ground anise seed
2 1/4 cups low-fat almond milk or vanilla soy milk
1/4 teaspoon ground cinnamon
2 tablespoons sucanat sugar
3 tablespoons fruit juice concentrate, or honey


Instructions:
1. Heat 2 1/2 cups of water in a small saucepan with the ginger, cardamom, anise and cinnamon. Bring to a boil, then reduce the heat and simmer for 2 to 3 minutes more and remove from the stove. Steep the tea bags in the spice mixture for 5 minutes. Strain into a container and store up to 1 week.

2. To serve, mix the tea concentrate with the almond milk and heat in a small saucepan, but do not boil. To prepare a single cup, mix equal parts of the tea concentrate with almond milk.
