Hot Spiced Soy Apple Cider
This delicious apple cider will whisk your imagination to the Swiss Alps for an après-ski experience to remember. If you wear a fake cast and hang out around the fire, you're guaranteed to make friends. Makes 6 servings


Ingredients:

2 cups apple cider
6 tablespoons maple syrup
One 1/2-inch piece fresh ginger, peeled and sliced
1 1/2 cups low-fat almond, vanilla, or plain soy milk
4 cinnamon sticks
1/2 cup fresh orange juice (from about 2 oranges)


Instructions:
1. In a saucepan over medium heat, heat the cider with the ginger and cinnamon sticks. Add the orange juice and maple syrup. Let mull for 15 minutes over low heat-do not bring to a boil.

2. Add the soy milk and serve in coffee mugs with cinnamon sticks.
