Healthier Pie Crust You can make extra crusts and freeze them. Roll them up and place them in a freezer bag to keep them fresh. Defrost them in the refrigerator for 4 to 6 hours in the freezer bag. Makes One 9-Inch Pie Crust. |

Ingredients: 1/2 cup whole wheat pastry flour 1 tablespoon sucanat sugar 1/4 cup oat flour 1 tablespoon soft tofu 1/2 cup spelt flour 1 tablespoon soy margarine 1/8 teaspoon sea salt | |

Instructions: 1. Mix together the flours, salt and sugar in a food processor and pulse for 1 minute. Add the tofu and margarine and mix for 2 minutes. Add 6 tablespoons cold water and mix for 1 minute more. Remove from the processor and form into a ball. Roll out approximately a 10-inch circle and press into a 9-inch pie pan. It can be used immediately or frozen at this point if you place it in a freezer bag. |
