Stir-Fried Chicken with Celery Makes 4 servings. |

Ingredients: 1 tablespoon peanut oil 1 pound boneless chicken breasts cut into 3/4 inch cubes 2 ribs celery cut on the diagonal, about 11/2 inches long tip to tip (about 11/4 cups) 1 small onion, thinly sliced, about 3/4 cup 1 cup sliced shitake mushrooms 3/4 cup Chicken Stock or Vegetable Stock mixed with 2 teaspoons cornstarch 3/4 to 1 teaspoon dried thyme Kosher salt and freshly ground black pepper to taste | |

Instructions: 1. Put oil in a wok over medium high heat. When it begins to smoke, add chicken and stir-fry about 2 to 3 minutes. 2. Add celery, onion, and mushrooms. Cook 2 to 3 minutes. Add chicken stock mixture, thyme, salt, and pepper, and cook until mixture thickens. Serve over rice. Cooking Tip This dish can easily be made an all-vegetarian affair by increasing the celery and onion to 2 cups and 1 cup respectively, and doubling the amount of mushrooms. |
