Sautéed Apricots with Ginger
Cooked fruit doesn't have to be a dessert. Try this dish as a condiment for roasted meats, especially pork. Makes 4 Servings.


Ingredients:

1/2 cup packed cilantro leaves
1 tablespoon butter
3 tablespoons brown sugar
1 tablespoon fresh ginger, chopped
1 tablespoon Tony Tantillo balsamic vinegar
1 shallot, chopped
Juice of 1 lime
2 cups halved and pitted apricots


Instructions:
1. Melt butter in a skillet over medium heat. Add ginger and shallots and cook just until shallots soften, a few minutes.

2. Add apricots, cut side down, brown sugar, balsamic vinegar, and lime juice. Cover and cook, stirring a few times, until fruit softens but still keeps its shape, about 5 minutes.
