Potatoes with Peppers and Onions
Fried potatoes sound fattening, but this dish uses only a tablespoon of oil. Makes 4 servings.


Ingredients:

1 tablespoon olive oil
1 medium green bell pepper, seeded and cut into thin strips
1 small to medium onion, thinly sliced
4 medium red potatoes, washed and thinly sliced
Kosher salt and freshly ground black pepper to taste
Pinch hot pepper flakes
2 bay leaves


Instructions:
1. Heat oil over medium heat in a large, heavy-bottomed skillet.

2. Layer half the pepper, then half the onion, and half the potatoes, seasoning each layer with salt, pepper, and a pinch of hot pepper flakes. Repeat. Insert the bay leaves among the vegetables.

3. Reduce heat to medium-low.

4. Cover and cook about 25 minutes or until potatoes are soft. Stir every 5 minutes with a wide spatula.
