Slow-Roasted Mashed Sweet Potatoes Slow roasting will bring out the maximum sweet potato flavor while using the barest of seasonings. Makes 6 servings. |

Ingredients: 3 pounds sweet potatoes 1 tablespoon butter, softened 1/2 teaspoon ground cardamom Kosher salt and freshly ground black pepper to taste 1 to 2 tablespoons brown sugar | |

Instructions: 1. Put the potatoes on a baking sheet in a 300°F oven for 2 hours. Remove, scoop out the flesh, and mash or puree (but not in a food processor). 2. Add butter, cardamom, salt, pepper, and 1 tablespoon of the brown sugar. Mix well and taste. Add remaining sugar if desired. (Can be made ahead and reheated in a double boiler or microwave oven.) Cooking Tip If you're using a food mill, you don't have to peel the cooked sweet potatoes. Just cut them in chunks and put them through the mill. The skin will stay behind. |
