Carrots with Honey-Mustard Glaze
The butter, honey, and mustard all work together to both accent and complement the carrots in this easy and delicious dish. Makes 4 servings.


Ingredients:

11/2 tablespoon butter
2 tablespoons minced shallots
1 pound carrots, peeled and sliced 3/8 inch thick
Kosher salt and freshly ground black pepper to taste
3 tablespoons fresh orange juice
1 tablespoon honey mustard or 2 teaspoons Dijon mustard and 1 teaspoon honey


Instructions:
1. Put butter in a nonstick skillet over medium-low heat.

2. Add shallots and cook, stirring, until soft, about 3 minutes.

3. Add carrots, salt, and pepper, stir and cover.

4. Cook 10 minutes.

5. Combine orange juice, mustard, and 3 tablespoons water.

6. Add to carrots, stir well, cover, and cook until carrots are tender, about 10 minutes.
